Chicken
- 2 large boneless skinless chicken breasts
- Salt & pepper (to taste)
- Flour (for dredging)
- 1 tablespoon olive oil
- 2 tablespoons butter (divided)
Sauce
- 1 whole head garlic (cloves peeled)
- 1/2 cup chicken broth or stock
- 1/2 teaspoon lemon juice
- 1/4 teaspoon garlic powder
- 1 cup heavy/whipping cream
- Parsley (chopped, optional)
Instructions
- Prepare the chicken: Cut the chicken breasts in half lengthwise to make 4 thinner cutlets. Season them generously with salt and pepper. Dredge each piece lightly in flour, shaking off excess.
- Sear the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once hot, add the chicken cutlets and sauté for 4-5 minutes on each side until golden brown. Remove and set aside.
- Cook the garlic: Reduce the heat to medium or medium-low if using a cast iron skillet. Add the remaining tablespoon of butter and let it melt. Add the peeled garlic cloves and cook, stirring often, for 3-4 minutes until the cloves turn lightly browned.
- Deglaze and reduce sauce base: Pour in the chicken broth, lemon juice, and sprinkle garlic powder into the skillet. Allow the mixture to bubble and simmer for about 4 minutes, or until the liquid reduces noticeably.
- Finish the sauce and cook chicken through: Stir in the heavy cream, then return the chicken to the pan. Let everything simmer together for about 5 minutes, until the sauce thickens and the chicken is fully cooked through. Garnish with freshly chopped parsley, if desired, before serving.
