Chicken Seasoning
- 1 tsp Italian seasoning

Chicken and Cooking
- 2 boneless, skinless chicken breasts (about 1.3 lb.)
- 2 Tbsp olive oil
- 2 Tbsp butter
- 2 cloves of garlic, minced
Sauce
- 1 cup chicken broth
- 1 Tbsp Dijon mustard
- 1 tsp soy sauce
- 1/3 cup heavy cream
- 2 Tbsp grated parmesan cheese
- 2 cups fresh spinach
Instructions
- Prepare the seasoning mix: In a small bowl, mix together the Italian seasoning, garlic powder, onion powder, salt, and freshly cracked black pepper to create a flavorful seasoning blend for the chicken.
- Slice and season the chicken: Using a sharp knife, carefully fillet each chicken breast into two thinner cutlets to ensure even cooking. Season each cutlet generously with the prepared seasoning mix on both sides.
- Cook the chicken: Heat a large skillet over medium heat and add the olive oil. When hot, place the seasoned chicken cutlets in the skillet. Cook each side for about 4 minutes until they turn golden brown and are cooked through. Remove the chicken and keep warm on a clean plate.
- Sauté the garlic: In the same skillet, add butter and minced garlic. Lower the heat to medium-low and sauté the garlic for one minute until it becomes fragrant without burning.
- Build the sauce base: Pour chicken broth into the skillet, then add Dijon mustard and soy sauce. Stir well, scraping the bottom of the pan to lift any flavorful browned bits into the sauce.
- Add cream and cheese: Stir in the heavy cream and grated parmesan. Let the sauce gently simmer for 5 minutes to thicken and develop flavor. Taste and adjust salt and pepper as needed.
- Incorporate spinach: Add the fresh spinach to the skillet and stir it into the sauce, allowing the residual heat to wilt the leaves evenly.
- Combine and serve: Return the cooked chicken cutlets to the skillet, spooning the creamy Dijon sauce over them. Heat through briefly, then serve hot with your choice of sides and enjoy!

- For a lighter version, substitute heavy cream with half-and-half.
- Chicken breasts can be pounded to even thickness instead of slicing if preferred.
