Ingredients
Soup Base
- 2 cups shredded chicken
- 1 tbsp olive oil (divided)
- 1 small yellow onion, diced
- 3 cloves garlic, finely minced
- 2 tbsp taco seasoning (divided)
- 1 quart chicken broth
- 2 (10 oz) cans Rotel fire roasted tomatoes and green chilies
- 1 (14 oz) can black beans, drained and rinsed
- 1 (14 oz) can corn kernels, drained
- 8 oz full-fat cream cheese, softened at room temperature
Toppings
- Shredded cheddar cheese
- Sour cream
- Fresh cilantro
- Green onions
- Tortilla chips or strips
- Lime wedges
Instructions
- Sauté Aromatics: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft and translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add Taco Seasoning: Sprinkle 2 tablespoons of taco seasoning over the onions and garlic, stirring well to evenly coat and release the spices’ flavors.
- Simmer Soup Base: Pour in the chicken broth, then add the fire-roasted tomatoes and green chilies, black beans, and corn kernels. Increase the heat to bring the mixture to a boil, then reduce to a gentle simmer for 8-10 minutes to meld the flavors.
- Incorporate Cream Cheese: Add the softened cream cheese in small pieces gradually, stirring gently to fully melt it into the soup without separating. Patience ensures a smooth creamy texture.
- Add Chicken and Heat Through: Stir in the shredded chicken and let the soup simmer for an additional 5 minutes to heat the chicken through and blend all flavors together.
- Serve and Garnish: Ladle the soup into bowls and top with shredded cheddar cheese, sour cream, fresh cilantro, green onions, tortilla chips, and lime wedges to add texture, freshness, and extra zest.
Notes
- For added spice, use extra fire-roasted tomatoes with green chilies or add a dash of hot sauce.
- Shredded rotisserie chicken works great for convenience.
- To make the soup lighter, substitute cream cheese with reduced-fat cream cheese or sour cream.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
- Serve with warm tortillas or over rice for a heartier meal.
