Ingredients
Batter
- ½ cup salted butter, melted
- 1 ¼ cups granulated sugar
- ¼ cup orange juice
- ¼ cup sour cream
- 2 eggs, beaten
- 2 teaspoons vanilla bean paste
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine sea salt
- 1 ½ cups fresh cranberries
- 1 Tablespoon orange zest
Glaze
- 1 Tablespoon orange juice
- 1 teaspoon whole milk
- ½ teaspoon vanilla bean paste
- 1 cup powdered sugar
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (177 degrees Celsius) to prepare for baking the bread.
- Prepare Loaf Pan: Butter and flour a 9×5 inch (23 x 13 cm) loaf pan to prevent sticking, then set it aside.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and fine sea salt until evenly combined, and set aside.
- Combine Wet Ingredients: In a large bowl, whisk the melted butter, granulated sugar, orange juice, sour cream, beaten eggs, and vanilla bean paste together until the mixture is smooth and well blended.
- Add Dry to Wet: Pour the dry ingredient mixture into the wet ingredients and stir gently until just combined, making sure there are no lumps or pockets of flour.
- Fold in Fruits and Zest: Carefully fold in the fresh cranberries and orange zest until they are evenly distributed throughout the batter without overmixing.
- Pour Batter into Pan: Transfer the prepared batter into the greased and floured loaf pan, spreading it evenly.
- Bake Bread: Place the loaf pan on the lower rack of the preheated oven and bake for 50 to 55 minutes. Start checking at 50 minutes by inserting a toothpick into the center; it should come out clean when done.
- Cool Bread: Allow the bread to cool completely in the pan for about 6 hours or preferably overnight for the best texture.
- Remove from Pan: Run a sharp knife around the edges to loosen the bread and carefully turn the loaf out onto a cutting board or serving plate.
- Prepare Glaze: In a medium bowl, whisk together the orange juice, whole milk, vanilla bean paste, and powdered sugar until smooth and glossy.
- Glaze the Bread: Once the bread has fully cooled, pour the prepared glaze evenly over the top to coat.
- Set the Glaze: Transfer the glazed bread to the refrigerator and chill for 30 to 60 minutes, allowing the glaze to set firmly.
- Serve: After the glaze is set, slice the bread and serve to enjoy the perfect balance of tart cranberries and sweet citrus flavors.
Notes
- Use fresh cranberries for the best texture and flavor; frozen cranberries can be used but may affect the crumb slightly.
- Allow the bread to cool completely before glazing to prevent the glaze from melting.
- You can substitute sour cream with Greek yogurt for a slightly tangier flavor and added protein.
- Make sure not to overmix the batter after adding the dry ingredients to avoid a dense bread.
- The glaze can be adjusted for thickness by adding a little more powdered sugar or milk as needed.
