- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup fresh or frozen cranberries
Orange Glaze
- 1/2 cup powdered sugar
- 1/2 teaspoon orange zest
- 2 tablespoons orange juice
- Pinch of salt
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350° F (175° C). Lightly spray an 8×8 inch or similar sized baking dish with cooking spray to prevent sticking.
- Mix Wet Ingredients: In a mixing bowl, whisk together the milk, egg, maple syrup, orange zest, orange juice, vanilla bean paste, and vanilla protein powder if using, until the mixture is well combined and smooth.
- Combine Dry Ingredients: In a separate large mixing bowl, whisk together the rolled oats, ground cinnamon, baking powder, and kosher salt, ensuring they are evenly mixed.
- Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients bowl. Stir gently until just combined. Fold in the fresh or frozen cranberries evenly throughout the mixture.
- Bake the Oatmeal: Transfer the oatmeal mixture into the prepared baking dish, spreading it out evenly. Place the dish in the oven and bake for 40-45 minutes, or until the oatmeal is set and the edges turn golden brown.
- Prepare the Orange Glaze: While the oatmeal cools, whisk together the powdered sugar, orange zest, orange juice, and a pinch of salt in a small bowl until smooth and glossy.
- Serve: After the oatmeal has cooled for about 10 minutes, drizzle the orange glaze over the top or serve it on the side. Slice into servings and enjoy warm.

- For a dairy-free version, use almond milk or another plant-based milk.
- The vanilla protein powder is optional but adds extra protein and flavor.
- Fresh cranberries can be substituted for frozen cranberries without thawing them first.
