Instructions

  2. Combine dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, granulated sugar, baking powder, baking soda, and salt until evenly mixed. Alternatively, pulse these ingredients together in a food processor.
  3. Incorporate the butter: Use a box grater to grate the very cold unsalted butter into shreds. Add the butter to the dry ingredients and stir with a wooden spoon until the flour coats the butter and the butter is well dispersed, with a coarse, crumbly texture. If using a food processor, pulse butter with dry ingredients until pea-sized pieces remain.
  4. Add buttermilk: Pour the cold buttermilk over the mixture and gently stir until the dough clings together without overworking. In a food processor, pulse just until the dough is crumbly but holds together when pinched.
  5. Lamination of dough: Transfer the dough to a lightly floured surface and form it into a disk. Flatten gently, fold in half, flatten again, then rotate the dough 90 degrees and repeat the fold and flatten process 5-6 times. This technique creates flaky, layered biscuits.
  6. Shape the biscuits: Flatten the laminated dough to an even 1-inch (2.5 cm) thickness. Use a 2 ½-inch (6.4 cm) biscuit cutter to cut out biscuits by pressing straight down without twisting. Re-gather scraps and repeat as needed.
  7. Bake the biscuits: Place the cut biscuits on the prepared baking sheet, spacing them at least 1 inch apart. Bake in the preheated oven for 12 minutes, or until the tops begin to turn a light golden brown.
