A vibrant and tangy Colombian Pineapple Sauce made from fresh pineapple, cinnamon, and a touch of vinegar, simmered to a jam-like consistency. This sweet and slightly tart sauce is perfect for enhancing savory dishes like hot dogs, ham, chicken, and fish, or even delicious on cakes and pastries.

  • Total Time: 35 minutes
  • Yield: About 2 cups (480 ml) of sauce

Ingredients

Fruit Base

  • 1 whole fresh pineapple
  • 1 cup (250 ml) water

Flavorings and Sweeteners

  • 1 stick cinnamon (or 1 tsp ground cinnamon)
  • 1 cup (200 g) white granulated sugar
  • 2 tbsp white vinegar (or apple cider vinegar)
  • 1/4 tsp salt

Thickening Agent

  • 1 tbsp cornstarch

Instructions

  1. Make the pineapple puree: In a blender, add the chunks of fresh pineapple and water and blend until completely smooth, creating a fresh pineapple puree that forms the base of the sauce.
  2. Prepare the sauce: Transfer the pineapple puree to a skillet over medium heat, then add in the sugar and cinnamon stick (or ground cinnamon). Allow the mixture to come to a simmer and cook, stirring occasionally, until it reduces by about one third and thickens slightly, approximately 15-20 minutes.
  3. Thicken the sauce: Lower the heat to medium-low. In a small bowl, combine the vinegar and cornstarch to create a slurry. Slowly pour this mixture into the simmering pineapple sauce while stirring continuously to prevent lumps. Maintain gentle heat and stir often as the sauce thickens rapidly, coming to a simmer again.
  4. Finish and cool: Once the sauce has thickened to the consistency of a runny jam, turn off the heat. Stir in the salt to balance the flavors. Allow the sauce to cool to room temperature before serving. Use it as a versatile condiment for savory and sweet dishes like hot dogs, ham, chicken, fish, cakes, and danishes.

Notes

  • This sauce pairs wonderfully with grilled or roasted meats, adding a sweet and tangy twist.
  • Use as a glaze for ham or chicken during the last 10 minutes of cooking.
  • Drizzle over vanilla ice cream or pound cake for a tropical dessert flair.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • Adjust sweetness by varying sugar amounts according to taste preferences.
  • For a spicier version, add a small pinch of ground cloves or ginger during simmering.
  • The vinegar type can be swapped with apple cider vinegar for a slightly fruitier note.
  • Serve chilled or at room temperature depending on your dish.
  • Because pineapple contains natural enzymes, avoid metal containers for storage to prevent discoloration.
  • The sauce thickens upon cooling; reheat gently if it becomes too thick before use.
