  • 180 g All-purpose Flour (plain flour)
  • ½ tsp Baking Powder

Instructions

  1. Melt Butter and Mix Sugars: Melt the unsalted butter in the microwave until completely liquid, then pour it into a mixing bowl with the granulated sugar and light brown sugar. Stir the mixture together until well combined and smooth.
  2. Prepare Espresso Paste: Add a splash of hot water to the espresso powder and mix thoroughly until it forms a smooth, concentrated coffee paste. Stir this paste into the butter and sugar mixture to evenly distribute the coffee flavor.
  3. Add Egg and Vanilla: Crack in the large egg and add the vanilla bean paste. Stir the ingredients until the mixture is homogeneous and creamy.
  4. Add Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, and salt. Gradually add these dry ingredients into the wet mixture, stirring until a soft cookie dough forms.
  5. Chill Dough: Cover the dough and chill it in the refrigerator for 30 minutes. This step firms up the dough, making it easier to scoop and shape.
