Instructions

  1. Sauté the aromatics: Heat 2 tablespoons of vegetable oil in a large frying pan over medium-high heat. Add the diced onion and cook for 1 to 2 minutes until softened. Stir in the minced garlic and cook for about 20 seconds until fragrant.
  2. Cook the vegetables: Add the diced tomato and sliced green pepper to the pan. Season with salt and freshly ground black pepper to taste. Continue cooking for 2 to 3 minutes until the tomatoes begin to soften.
