Ingredients
Dressing
- ¼ cup mayonnaise
- ¼ cup sour cream (or Greek yogurt)
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Kosher salt, to taste
- Ground black pepper, to taste
Salad
- 1 pound frozen peas, thawed and patted dry
- 6 slices turkey bacon, sliced into ½-inch pieces
- ⅓ cup diced red onion
- 4 ounces sharp cheddar cheese, cut into small cubes (about the size of the peas)
- 2 to 3 tablespoons finely chopped fresh parsley
Instructions
- Cook the turkey bacon: Heat a skillet over medium heat and add the sliced turkey bacon. Cook for 6–8 minutes, stirring occasionally, until the bacon is browned and slightly crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain off excess grease.
- Make the dressing: In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), apple cider vinegar, honey, kosher salt, and ground black pepper until the mixture is smooth and well combined.
- Assemble the salad: In a medium bowl, combine the thawed and dried peas, diced red onion, cubed sharp cheddar cheese, and cooked turkey bacon pieces. Pour the prepared dressing over the salad ingredients and gently fold everything together until evenly coated. Taste the salad and adjust seasoning with additional salt or pepper if needed.
- Chill before serving: Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 30 minutes. This chilling step allows the flavors to meld beautifully for a more delicious and cohesive taste.
Notes
- To reduce fat content, substitute sour cream with Greek yogurt.
- You can replace turkey bacon with regular bacon or vegetarian bacon for different dietary preferences.
- For a stronger tang, increase apple cider vinegar slightly but balance with honey to maintain sweetness.
- Make sure to thoroughly pat dry the peas after thawing to prevent a watery salad.
- This salad can be stored in an airtight container in the refrigerator for up to 2 days, but it’s best enjoyed fresh.
