Instructions

  1. Prep the lobster: Gather all ingredients and rinse the lobster tails under cold water to clean them before cooking.
  2. Boil the lobster: Bring a large pot of salted water to a boil (1 teaspoon salt per quart). Boil the lobster tails for 3-5 minutes until shells turn bright red and internal temperature reaches at least 145°F. Remove and let cool.
  3. Make the dressing: In a mixing bowl, combine diced celery, mayonnaise, Dijon mustard, 1/8 teaspoon salt, and a squeeze of fresh lemon juice (about 1 teaspoon). Stir well to blend flavors.
