This Cinnamon Tea Cake is a moist and tender cake infused with warm cinnamon flavor, topped with a buttery cinnamon sugar glaze. Perfect for afternoon tea or a cozy dessert, it combines a rich sour cream batter with a delightful cinnamon sugar crust for a simple yet irresistible treat.

  • Total Time: 45 minutes
  • Yield: 8 servings

Ingredients

For the Cake:

  • 115 g (½ cup) caster/superfine sugar
  • 125 g (½ cup) unsalted butter, at cool room temperature
  • 1 teaspoon vanilla bean paste
  • 1 large egg, at room temperature
  • 120 g (½ cup) full-fat sour cream, at cool room temperature
  • 150 g (1 cup) plain/all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 1 teaspoon ground cinnamon

For the Cinnamon Sugar Topping:

  • 1 tablespoon (20 g) unsalted butter
  • 1 teaspoon ground cinnamon
  • 1 ½ tablespoon granulated sugar

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 180°C (355°F). Grease and line the base and sides of a 19 cm (7.5 inch) springform tin with removable sides to ensure the cake releases easily after baking.
  2. Cream Butter and Sugar: In a large bowl, add the butter, sugar, and vanilla bean paste. Beat using electric hand beaters for a couple of minutes until the mixture is pale and creamy, creating a light texture for the cake batter.
  3. Add Egg and Sour Cream: Beat in the egg until well combined, then incorporate the sour cream and beat until smooth, adding moisture and richness to the batter.
  4. Combine Dry Ingredients: Switch to a large spoon and fold in the flour, baking powder, baking soda, ground cinnamon, and sea salt. Carefully fold until just combined to avoid overworking the batter, which will be thick.
  5. Transfer Batter and Smooth: Pour the batter into your prepared tin and use an offset spatula to smooth the top evenly for an even bake.
  6. Bake the Cake: Bake in the preheated oven for 28-32 minutes. Check doneness by inserting a skewer into the center; it should come out clean.
  7. Prepare Cinnamon Sugar Topping: While the cake bakes, melt the butter. In a small bowl, combine the ground cinnamon and granulated sugar to create the topping mix.
  8. Apply Topping: When the cake is done, while still warm, brush the top with the melted butter and evenly sprinkle the cinnamon sugar mixture over it to add a sweet, spiced crust.
  9. Cool and Serve: Allow the cake to cool for 10 minutes before removing the springform sides. Let the cake cool completely before slicing to set the texture.

Notes

  • Note 1: Using plain/all-purpose flour provides the ideal texture for this cake; you can substitute with gluten-free flour blend if needed but checking for ratios is recommended.
  • Note 2: Ensure the butter for topping is melted but not hot to help the cinnamon sugar adhere evenly on the cake surface.
