Instructions
- Cream butter and sugar: Using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy. Scrape down the sides of the bowl and mix again briefly to ensure everything is evenly combined.
- Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla bean paste, mixing thoroughly after each addition.
- Sift dry ingredients: In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt to remove any lumps and combine evenly.
- Combine dry and wet ingredients: Gradually add the sifted dry ingredients to the wet mixture, mixing on low speed for about 30 seconds. Be careful not to overmix, as this can toughen the dough.
- Chill the dough: Roll the dough out between two sheets of parchment paper to your desired thickness. Transfer the rolled dough to a baking sheet and refrigerate for 1 hour to firm up.
- Cut dough shapes: Remove dough from the fridge and cut into shapes using cookie cutters. Place the cut-out shapes back into the fridge for another hour to help them retain their shape during baking.
- Preheat oven: Preheat your oven to 350°F (175°C) while the dough is chilling.
- Bake cookies: Arrange the cookie shapes on a baking sheet lined with parchment paper. Bake in the preheated oven for 8 to 12 minutes, depending on cookie size, until set but still soft in the center.
- Cool and finish: Let the cookies cool completely on a wire rack. Optionally, dust with powdered sugar before serving for a sweet finishing touch.
