Ingredients

  • 2 cups beet puree (from roasted beets)

Glaze

  • 3 ounces reduced fat cream cheese (Neufchatel), softened
  • 3 tablespoons powdered sugar, sifted (plus extra if needed)
  • 2 tablespoons milk (plus extra if needed)
  • 1/4 teaspoon vanilla bean paste

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F to prepare for roasting the beets.
  2. Roast Beets and Puree: Wash the beets and place them in a small roasting pan with 1/2 cup water. Cover and bake for 45 minutes to 1 hour until tender when pierced with a fork. Dunk the beets in cool water, peel off the skins with your fingers, roughly chop, and puree in a blender or food processor. Measure out 2 cups of the beet puree and set aside.
