This Chinese Chicken Pasta Salad is a refreshing and crunchy dish combining tender shredded chicken, cooked rotini pasta, fresh crunchy vegetables, and crispy chow mein noodles. Tossed with a tangy and slightly sweet dressing made from yogurt, soy sauce, and mayonnaise, it’s perfect as a light lunch or a flavorful side for any meal.

  • Total Time: 15 minutes
  • Yield: 6 servings

Ingredients

Salad Ingredients

  • 2 cups shredded cooked chicken breast
  • 4 cups cooked rotini pasta (about 3 cups dry)
  • 1 cup fresh snow peas
  • ½ cup diced red bell pepper
  • ½ cup shredded carrot
  • 2 cups chopped napa cabbage
  • ¼ cup sliced green onions
  • 8 ounce can sliced water chestnuts, drained
  • 2 tablespoons sesame seeds
  • 1 cup chow mein noodles

Dressing Ingredients

  • ⅔ cup plain yogurt
  • ¼ cup soy sauce
  • ¼ cup mayonnaise
  • ½ teaspoon black pepper
  • ¼ teaspoon ground ginger
  • Honey, to taste
  • Salt, to taste

Instructions

  1. Toast Sesame Seeds: Preheat the oven to 375°F. Spread the sesame seeds evenly on a baking sheet and toast them in the oven for 5 minutes. Keep a close eye to prevent burning. Once toasted, remove from the oven and let them cool.
  2. Combine Salad Ingredients: In a large bowl, combine the shredded cooked chicken, cooked rotini pasta, fresh snow peas, diced red bell pepper, shredded carrot, chopped napa cabbage, sliced green onions, sliced water chestnuts, and chow mein noodles. Toss gently to mix everything evenly and set aside.
  3. Prepare Dressing: In a separate bowl, whisk together plain yogurt, soy sauce, mayonnaise, black pepper, and ground ginger. Taste the dressing and add honey to your preferred level of sweetness and salt if desired. Stir well to combine all flavors.
  4. Toss Salad with Dressing: Pour the prepared dressing over the chicken and pasta mixture. Toss gently but thoroughly to coat all ingredients with the dressing evenly.
  5. Garnish and Serve: Sprinkle the cooled toasted sesame seeds over the salad as a garnish. Serve immediately or chill briefly before serving for enhanced flavors.

Notes

  • For best texture, add the chow mein noodles just before serving to keep them crisp.
  • Adjust honey and salt in the dressing according to your taste preference.
  • This salad can be made a few hours ahead and refrigerated; add crunchy noodles and sesame seeds just before serving.
  • Use rotini pasta or any short shaped pasta to hold the dressing well.
