Instructions
- Make the marinade: In a mixing bowl, combine olive oil, lemon juice, minced garlic, white pepper, Greek seasoning, kosher salt, and black pepper. Mix well until thoroughly combined.
- Marinate the chicken: Place the chicken cubes in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, coating all pieces evenly. Seal or cover and refrigerate for at least 1 hour, preferably overnight, to enhance flavor.
- Prep the skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
- Prep the grill: Preheat your grill or grill pan over medium-high heat.
- Thread the chicken: Skewer the marinated chicken cubes alternating with chopped onion pieces.
- Grill the souvlaki: Place the skewers on the preheated grill. Cook for 6-8 minutes per side, turning occasionally to ensure even cooking and nice grill marks, until the chicken is fully cooked.
- Rest the meat: Remove the skewers from the grill and let them rest for a few minutes to allow juices to redistribute.
- Serve: Serve chicken souvlaki hot, garnished with fresh herbs and accompanied by pita bread, tzatziki sauce, or a Greek salad for a full Mediterranean meal.
