Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup minced onion (about 1 small onion)
- 3 cups shredded cooked chicken (rotisserie chicken works well)
- 17.6 ounces fresh gnocchi (not dried)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 24 ounces pasta sauce
- 1 cup shredded mozzarella cheese
Topping
- 2 tablespoons butter
- 3/4 cup panko bread crumbs
- 1/4 cup Parmesan cheese
- 1/2 teaspoon Italian seasoning
Garnish
- 2 tablespoons freshly chopped basil
Instructions
- Preheat Broiler: Place an oven rack in the upper third of your oven and preheat the broiler to low to prepare for finishing the dish with a golden topping.
- Sauté Aromatics and Gnocchi: Heat olive oil in a large oven-proof skillet over medium heat. Add minced garlic and onion, sautéing for about 3 minutes until translucent. Add gnocchi, stirring after 2 minutes, and cook for a total of 3 to 4 minutes until the gnocchi start to brown slightly.
- Add Chicken and Sauce: Stir in shredded chicken, pasta sauce, Italian seasoning, salt, and pepper. Mix well, reduce heat to medium low, cover the skillet, and cook for 5 minutes to heat everything through and let flavors meld.
- Prepare Topping: In a microwavable bowl, melt the butter. Add panko breadcrumbs, Parmesan cheese, and Italian seasoning, mixing thoroughly until combined into a crumbly topping.
- Assemble for Broiling: Remove the cover from the skillet, sprinkle shredded mozzarella evenly over the dish, then evenly distribute the prepared breadcrumb topping on top.
- Broil: Place the skillet under the broiler and cook for 5 to 7 minutes, or until the cheese is melted and bubbling and the breadcrumb topping is golden brown and crispy.
- Garnish and Serve: Remove the skillet from the oven, sprinkle freshly chopped basil over the top, and serve hot.
Notes
- Using fresh gnocchi is preferred over dried for better texture and quicker cooking.
- Rotisserie chicken is a convenient option to save time, but you can also use cooked chicken breast or thighs.
- Make sure to use an oven-safe skillet for broiling.
- Keep a close eye on the dish while broiling to prevent the topping from burning.
- Fresh basil adds a bright finish but can be omitted if unavailable.
- For extra crispiness, you can toast the breadcrumb topping briefly in a separate pan before adding.
