Ingredients
Meatball Ingredients
- ¾ cup finely grated carrots
- 1 pound ground chicken
- ½ cup panko breadcrumbs
- ½ teaspoon onion powder
- ½ tablespoon Italian seasoning
- ¾ teaspoon sea salt
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- ½ cup grated parmesan cheese
- 1 egg
Instructions
- Preheat Oven: Preheat your oven to 400℉ to prepare for baking the meatballs evenly and thoroughly.
- Prepare Carrots: Place the finely grated carrots into a clean towel and squeeze out some of the moisture. This ensures the meatballs won’t become too wet and fall apart during cooking.
- Mix Ingredients: Transfer the squeezed carrots to a large mixing bowl. Add ground chicken, panko breadcrumbs, onion powder, Italian seasoning, sea salt, garlic powder, paprika, parmesan cheese, and the egg. Mix everything together thoroughly using clean hands or a spoon until all ingredients are well combined.
- Shape Meatballs: Gently roll the meat mixture into golf-ball sized portions. This size ensures even cooking without drying out.
- Arrange Meatballs: Place the meatballs in a single layer on a large baking sheet, making sure they are spaced slightly apart for even cooking.
- Bake: Bake in the preheated oven for 18-20 minutes or until the meatballs are cooked through and reach an internal temperature of 165℉ (74℃).
- Serve: Enjoy the meatballs warm with your favorite sauce, pasta, or vegetables. Leftovers can be cooled completely and stored in an airtight container in the fridge for 3-4 days.
Notes
- Ensure to squeeze the grated carrots well to remove excess moisture for better binding.
- Use a meat thermometer to verify internal temperature for food safety.
- Panko breadcrumbs help keep the meatballs light and tender; you can substitute with gluten-free breadcrumbs if needed.
- Customize seasoning according to your preference by adding fresh herbs or extra spices.
- These meatballs freeze well; freeze cooked meatballs in a single layer then transfer to a freezer bag for up to 3 months.
