Cauliflower Patties
- 20 oz riced cauliflower (frozen or homemade)
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1/4 tsp oregano
- 1/2 tsp garlic powder
- Salt, to taste
Cheese Filling
- 1 oz grated mozzarella cheese
- 1 oz grated sharp cheddar cheese
Instructions
- Cook the Cauliflower: Microwave the frozen riced cauliflower according to package instructions. If using homemade riced cauliflower, cover a bowl of 20 oz cauliflower and microwave for 8-9 minutes, depending on chunk size, until tender.
- Prepare Oven and Baking Sheet: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
- Drain Excess Liquid: Allow the cooked cauliflower to cool until safe to handle. Transfer it into doubled cheesecloth or a mesh vegetable bag, then squeeze out all excess moisture to ensure crispy patties.
- Mix Ingredients: In a mixing bowl, combine the drained cauliflower, egg, grated Parmesan cheese, oregano, garlic powder, and salt. Mix thoroughly until all ingredients are evenly incorporated.
- Form Patties: Divide the mixture into two equal portions and pat each into round patties about 1/4 inch thick and 5 to 5 1/2 inches in diameter.
- Bake Patties: Place the patties on the prepared baking sheet and bake in the preheated oven for 20-23 minutes until they start to brown and firm up.
- Add Cheese and Assemble: Remove the patties from the oven. Spread the shredded mozzarella and sharp cheddar cheese evenly over one patty, then cover with the second patty to form a sandwich.
- Melt Cheese: Return the assembled grilled cheese to the oven and bake for an additional 3-5 minutes or until the cheese inside melts completely.

- Make sure to squeeze out as much liquid as possible from the cauliflower to avoid soggy patties.
- If you cannot find frozen riced cauliflower, you can make your own by pulsing cauliflower florets in a food processor.
