A low-carb, gluten-free twist on the classic grilled cheese sandwich using cauliflower patties instead of bread. This delicious recipe combines riced cauliflower with Parmesan, mozzarella, and cheddar cheeses, seasoned with oregano and garlic powder, then baked to golden perfection for a satisfying and healthy meal.

  • Total Time: 40 minutes
  • Yield: 1 serving

Ingredients

Cauliflower Patties

  • 20 oz riced cauliflower (frozen or homemade)
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp oregano
  • 1/2 tsp garlic powder
  • Salt, to taste

Cheese Filling

  • 1 oz grated mozzarella cheese
  • 1 oz grated sharp cheddar cheese

Instructions

  1. Cook the Cauliflower: Microwave the frozen riced cauliflower according to package instructions. If using homemade riced cauliflower, cover a bowl of 20 oz cauliflower and microwave for 8-9 minutes, depending on chunk size, until tender.
  2. Prepare Oven and Baking Sheet: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
  3. Drain Excess Liquid: Allow the cooked cauliflower to cool until safe to handle. Transfer it into doubled cheesecloth or a mesh vegetable bag, then squeeze out all excess moisture to ensure crispy patties.
  4. Mix Ingredients: In a mixing bowl, combine the drained cauliflower, egg, grated Parmesan cheese, oregano, garlic powder, and salt. Mix thoroughly until all ingredients are evenly incorporated.
  5. Form Patties: Divide the mixture into two equal portions and pat each into round patties about 1/4 inch thick and 5 to 5 1/2 inches in diameter.
  6. Bake Patties: Place the patties on the prepared baking sheet and bake in the preheated oven for 20-23 minutes until they start to brown and firm up.
  7. Add Cheese and Assemble: Remove the patties from the oven. Spread the shredded mozzarella and sharp cheddar cheese evenly over one patty, then cover with the second patty to form a sandwich.
  8. Melt Cheese: Return the assembled grilled cheese to the oven and bake for an additional 3-5 minutes or until the cheese inside melts completely.

Notes

  • Make sure to squeeze out as much liquid as possible from the cauliflower to avoid soggy patties.
  • If you cannot find frozen riced cauliflower, you can make your own by pulsing cauliflower florets in a food processor.
  • This recipe is best served immediately to enjoy the melted cheese filling.
  • For extra flavor, try adding herbs like basil or chives to the cauliflower mixture.
  • Use parchment paper on the baking sheet to make cleaning easy and prevent sticking.
