A vibrant and flavorful Caribbean Jerk Chicken recipe marinated in a spicy, aromatic blend and paired with a fresh, tangy pineapple salsa. Perfectly grilled chicken breasts served with optional steamed white rice make for a tropical-inspired, colorful meal.

  • Total Time: 40-46 minutes
  • Yield: 4 servings

Ingredients

Chicken Marinade

  • 4 boneless skinless chicken breasts, pounded to even 1/2 inch thickness
  • 1/3 cup olive oil
  • Juice of 2 limes (about 2-3 tablespoons)
  • 2 teaspoons minced garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon onion powder
  • 3 teaspoons allspice
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon honey

Pineapple Salsa

  • 1 cup diced pineapple
  • 1/2 onion, diced
  • Handful cilantro, roughly chopped
  • 1 jalapeno, diced (optional)
  • Juice of 1 lime
  • 2 teaspoons honey
  • Salt to taste

Additional

  • Steamed white rice for serving (optional)

Instructions

  1. Prepare the Marinade: In a medium bowl, stir together olive oil, lime juice, minced garlic, soy sauce, onion powder, allspice, crushed red pepper flakes, and honey until well combined. Add the chicken breasts to the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes to allow flavors to infuse.
  2. Make the Pineapple Salsa: While the chicken marinates, combine diced pineapple, diced onion, chopped cilantro, diced jalapeno (if using), lime juice, honey, and salt in a bowl. Toss gently to combine. For a smoother texture, optionally pulse the mixture a few times in a blender or food processor. Chill until serving.
  3. Cook the Chicken: Preheat a grill or skillet over medium heat. Using tongs, transfer the chicken breasts from the marinade to the grill or skillet, discarding any leftover marinade. Cook the chicken for 6-8 minutes on each side, or until fully cooked through and internal temperature reaches 165°F (74°C).
  4. Serve: Plate the grilled jerk chicken breasts and top or serve alongside the chilled pineapple salsa. Optionally serve with steamed white rice for a complete meal.

Notes

  • To ensure even cooking, pound chicken breasts to an even thickness of about 1/2 inch.
  • Marinating for longer than 30 minutes (up to 4 hours) will result in more flavorful chicken.
  • Adjust the amount of crushed red pepper flakes and jalapeno to control the heat level.
  • Pineapple salsa can be made ahead and refrigerated for up to 2 days.
  • Use fresh lime juice for the best flavor.
  • Discard marinade after removing chicken to avoid cross-contamination.
