Instructions

- Chill Dough: Divide the dough into two equal halves. Shape each half into an approximately 8-inch log. Wrap each log tightly in parchment paper, wax paper, or plastic wrap, and refrigerate them for at least 6 hours or up to 24 hours to firm up the dough.

- Slice Cookies: Remove dough logs from the refrigerator and slice them into discs about 1/4-inch thick. You can slice slightly thicker, up to about 1/3 inch, if preferred. Place the slices about 1 inch apart on ungreased baking sheets or silicone mats to allow for even baking.
