This Caramelized Onion White Bean Dip combines the rich, sweet flavors of slowly caramelized onions with creamy cannellini beans, enhanced by fresh herbs and a hint of lemon. Perfect as a sophisticated appetizer or snack, this dip is smooth, flavorful, and versatile, ideal for serving with vegetables, crackers, or bread.

  • Total Time: 40-45 minutes
  • Yield: 4 servings

Ingredients

Caramelized Onions

  • 1 1/2 lbs sweet onion, thinly sliced (quarter moons if large, half moons if small)
  • 1 tbsp extra virgin olive oil
  • Pinch of salt

Bean Dip

  • 28 oz can (about 3 cups cooked) cannellini beans or other white beans, drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh squeezed lemon juice
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, more to taste
  • 2-4 tbsp cold water or aquafaba (liquid from can of beans)
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage (or 1 tsp dried)
  • Additional caramelized onions for garnish (optional)

Instructions

  1. Caramelize Onions: Warm a large skillet over medium-low heat. Add 1 tablespoon of olive oil and the sliced onions along with a pinch of salt. Cook slowly, stirring occasionally, for 30-35 minutes until the onions turn dark golden and develop a rich caramelized flavor.
  2. Prepare Bean Base: In a food processor, combine the drained cannellini beans, 2 tablespoons of olive oil, fresh lemon juice, onion powder, garlic powder, and 1/2 teaspoon salt. Process until smooth, gradually adding cold water or aquafaba to achieve your desired consistency. Let the processor run several minutes, pausing to scrape down the sides intermittently. Taste and adjust salt and lemon juice as needed.
  3. Combine Herbs and Onions: Add the fresh chopped rosemary, sage, and caramelized onions to the food processor (reserve some onions for garnish if desired). Pulse a few times to chop and incorporate them evenly into the dip, ensuring some texture remains from the onions.
  4. Serve or Store: Enjoy the dip immediately for the freshest flavor, or refrigerate for a few hours to allow the flavors to meld and deepen. The dip will keep well in the refrigerator for up to one week.

Notes

  • Slow caramelization of onions is key to developing deep sweetness; be patient and cook over low heat to avoid burning.
  • Aquafaba is a great vegan alternative to water and adds creaminess without extra fat.
  • Fresh herbs significantly enhance flavor but dried herbs can be used if fresh are unavailable.
  • This dip pairs well with raw vegetables, pita chips, crackers, or toasted bread slices.
  • You can adjust the thickness of the dip by adding more or less liquid during processing.
