Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 medium onion, chopped
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes
- 1/2 tablespoon Cajun seasoning
- 1 cup uncooked orzo pasta
- 2 cups low sodium chicken broth
- 1 teaspoon lemon juice
- 1 cup heavy/whipping cream
- 2 cups cooked shredded or rotisserie chicken
- 1/2 cup freshly grated parmesan cheese
Instructions
- Sauté Onion: Heat olive oil and butter in a pot over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
- Add Aromatics and Orzo: Stir in the minced garlic, sun-dried tomatoes, Cajun seasoning, and uncooked orzo pasta. Cook for 2-3 minutes, stirring frequently to toast the pasta and release the flavors.
- Simmer with Liquids: Pour in the chicken broth, lemon juice, and heavy cream. Bring the mixture to a gentle bubble, then reduce the heat to medium or medium-low to maintain a slow simmer. Cook uncovered for 10 minutes, stirring often, until the orzo is tender and the sauce has thickened slightly.
- Add Chicken and Cheese: Stir in the shredded chicken and freshly grated parmesan cheese until well combined and heated through.
- Rest and Thicken: Remove the pot from heat, cover it, and let the dish rest for 3-5 minutes to allow the sauce to thicken and flavors to meld before serving.
Notes
- For homemade Cajun seasoning, combine paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and black pepper.
- Use rotisserie chicken for convenience and added flavor.
- Adjust the cream quantity if you prefer a lighter or thicker sauce.
- Serve with a side of steamed vegetables or a fresh salad for a complete meal.
