Brownies
- 1 batch homemade brownies (no frosting, no extra chocolate chips)
Cookie Dough
- 2 1/2 cups all-purpose flour
- 1 1/2 cups cake flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter, cold and cubed
- 1 cup packed brown sugar (light or dark)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 large egg yolks
- 2 tsp vanilla bean paste
- 1 1/4 cup semi-sweet chocolate chips
- 1 cup white chocolate chips
Instructions
- Prepare Brownies: Make the brownies according to your favorite recipe without frosting or additional chocolate chips. After baking, let them cool on the counter for 15 minutes, then freeze for 30 to 45 minutes to firm up.
- Mix Dry Ingredients: In a large bowl, combine all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- Cream Butter and Sugars: Using a stand mixer fitted with a paddle attachment, beat the cold cubed butter with brown sugar and granulated sugar until smooth and creamy, about 1 to 2 minutes.
- Add Eggs and Vanilla: Beat in the eggs, egg yolks, and vanilla bean paste until fully incorporated, scraping down the sides of the bowl as needed.
- Incorporate Dry Ingredients: Gradually add the dry ingredients into the wet mixture in 1/4 cup increments, mixing until just combined. Then fold in both semi-sweet and white chocolate chips.
- Preheat Oven & Prepare Baking Sheets: Heat the oven to 400°F (204°C). Line two baking sheets with parchment paper or silicone mats.
- Portion Cookie Dough: Scoop about 1.5 oz portions of cookie dough and flatten each slightly into a circle, using lightly floured hands if the dough is sticky.
- Prepare Brownie Centers: Remove the brownies from the freezer, trim the edges, and cut into small 1-inch cubes weighing about 1 oz each. Roll each brownie cube into a ball.
- Assemble Cookies: Place one brownie ball onto each dough circle, cover with another flattened dough portion, and pinch the edges to seal the brownie inside completely. Roll gently into a ball shape and place on the prepared baking sheets.
- Bake Cookies: Bake cookies in the oven for approximately 10 minutes or until the tops turn golden brown.
- Cool: Let the cookies cool on the baking sheet for 15 minutes to set, then transfer to a wire rack to cool completely before serving. Enjoy!
