Ingredients
Chocolate Mixture
- 6 Tbsp butter
- 4 oz bittersweet chocolate, chopped
Wet Ingredients
- 2/3 cup (152g) granulated sugar
- 1 Tbsp corn syrup
- 1 egg
- 1/2 Tbsp vanilla bean paste
Dry Ingredients
- 3/4 cup (114g) all-purpose flour
- 1/2 tsp salt
Instructions
- Prepare Oven and Pan: Preheat the oven to 350°F (180°C). Spray a silicone mini muffin pan with non-stick spray and set aside.
- Melt Butter and Chocolate: Place the butter and chopped bittersweet chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- Add Sugar and Corn Syrup: Whisk the granulated sugar and corn syrup into the melted chocolate mixture. Let it stand for 5 minutes to incorporate flavors and cool slightly.
- Incorporate Egg and Vanilla: Add the egg and vanilla bean paste to the chocolate mixture. Use an electric hand mixer to beat the batter for 2 minutes until well combined and slightly fluffy.
- Fold in Dry Ingredients: Gently fold in the all-purpose flour and salt until just combined, being careful not to overmix to maintain a tender texture.
- Portion Batter: Spoon the batter evenly into the prepared silicone mini muffin pan, filling each cup almost to the top.
- Bake: Bake in the preheated oven for 20-22 minutes, or until the tops of the brownie bites are glossy and beginning to crack, indicating they are set but fudgy inside.
- Cool and Remove: Allow the brownie bites to cool completely in the pan before removing them carefully to maintain their shape.
- Store: Store the brownie bites in an airtight container for up to 4 days to keep them fresh and moist.
Notes
- Using bittersweet chocolate provides a rich, deep chocolate flavor; you can substitute with semisweet chocolate if preferred.
- Silicone mini muffin pans work best for easy removal without damaging the brownie bites.
- Do not overbake as the brownies will become dry; they should be fudgy with a shiny crackled top.
- Allowing the batter to rest after adding sugar and corn syrup improves texture and sweetness integration.
- For a nutty variation, fold in chopped walnuts or pecans before baking.
