Ingredients
Wet Ingredients
- 1/4 cup applesauce (or mashed banana)
- 1/4 cup honey (or agave)
- 1/2 tsp pure vanilla extract
Dry Ingredients
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 1/4 cup rolled oats
To Serve
- Yogurt (or fresh fruit)
Instructions
- Prepare the pan: Grease a muffin tin or mini muffin tin thoroughly to prevent sticking and set it aside.
- Mix wet ingredients: In a medium bowl, whisk together the applesauce (or mashed banana), honey (or agave), and pure vanilla extract until smooth and combined.
- Add dry ingredients: Stir in cinnamon, salt, and rolled oats into the wet mixture until everything is evenly mixed and a sticky batter forms.
- Shape granola cups: Portion the mixture evenly into six muffin cups. Press the batter firmly up the sides of each muffin cup to form a cup shape, as this will help hold the shape after baking.
- Preheat oven: Preheat your oven to 330°F (165°C) while shaping the granola cups.
- Bake: Place the muffin tin in the preheated oven and bake for 12 minutes until the edges start to crisp and the cups hold together.
- Press sides again: Remove the muffin tin from the oven and carefully press the sides of each granola cup into the muffin tin again with a spoon to reinforce their shape.
- Cool: Let the granola cups sit in the tin for 10 minutes to cool and firm up, which will help prevent crumbling when removing.
- Serve or store: Gently remove the granola cups from the tin once cooled. Serve with yogurt or fresh fruit as desired. These cups can also be frozen and thawed for later use.
Notes
- You can double the recipe easily to make a dozen granola cups, perfect for meal prepping or feeding a family.
- Substitute mashed banana for applesauce and agave syrup for honey to fit dietary preferences or availability.
- Ensure you press the sides firmly both before and after baking to maintain the cup shape and minimize crumbling.
- Allow granola cups to cool in the muffin tin before removal to help them set perfectly.
- Store granola cups in an airtight container at room temperature for up to 3 days, or freeze to extend shelf life.
