Ingredients
Chocolate Coating
- 1/3 cup semisweet chocolate chips
- 2 tablespoons creamy peanut butter
- 1 teaspoon coconut oil
Fruit
- 1-1/2 cups fresh blueberries
Topping
- 1/2 cup confectioners’ sugar
Instructions
- Melt the chocolate: Combine the semisweet chocolate chips, creamy peanut butter, and coconut oil in the top of a double boiler over gently simmering water. Stir constantly until the mixture is melted and smooth.
- Wash and dry blueberries: Before coating, thoroughly wash and dry the fresh blueberries to remove any dirt or residues. Drying is essential to ensure the chocolate adheres properly.
- Coat the blueberries: Place the washed blueberries in a large bowl and pour the melted chocolate mixture over them. Gently fold the blueberries with a rubber spatula until evenly coated. Let them rest for 1 to 2 minutes to allow the chocolate to set slightly.
- Dust with confectioners’ sugar: Sprinkle the confectioners’ sugar over the coated blueberries and gently toss to coat them evenly without dissolving the sugar immediately.
- Chill and serve: Spread the coated blueberries in an even layer on a parchment-lined sheet pan. Use clean fingers to separate any clusters. Chill in the refrigerator for 10 to 15 minutes to let the chocolate fully set, then serve and enjoy.
Notes
- Ensure blueberries are completely dry before coating to help the chocolate stick better.
- Use a double boiler or a heatproof bowl over simmering water to avoid burning the chocolate.
- You can substitute creamy peanut butter with any nut or seed butter if preferred.
- Store leftovers in the refrigerator for up to 2 days to maintain freshness.
- This recipe is best enjoyed chilled for the perfect texture and flavor balance.
