A refreshing and nutritious Blueberry Cauliflower Smoothie that combines frozen cauliflower florets, mixed berries, banana, and almond butter blended with coconut water and lime juice. This smoothie is perfect for a quick breakfast or a healthy snack, offering a delicious way to incorporate vegetables and antioxidants into your diet.

  • Total Time: 5 minutes
  • Yield: 2 servings

Ingredients

Vegetables and Fruits

  • 1 cup frozen cauliflower florets
  • 1/2 cup frozen blueberries
  • 1/2 cup frozen blackberries
  • 1 ripe banana (can substitute mango or pineapple)
  • Juice from 1 lime (lemon can be used as a substitute)

Liquids

  • 1 to 1 1/2 cups coconut water

Additional Ingredients

  • 1 tablespoon chia seeds (can substitute hemp or flax seeds)
  • 2 tablespoons almond butter

Instructions

  1. Add to blender: Place all the ingredients into a high-speed blender, starting with 1 cup of coconut water to help with blending.
  2. Blend: Blend the mixture until completely smooth. If the smoothie is too thick, gradually add the remaining coconut water until you reach your desired consistency.
  3. Taste and adjust: Taste the smoothie and adjust the flavors as desired. For a thicker smoothie, add a bit more frozen cauliflower. If you prefer it sweeter, add honey or your favorite protein powder which often contains stevia.
  4. Serve: Pour the smoothie into glasses and enjoy immediately for the best freshness and flavor.

Notes

  • You can substitute lime juice with lemon juice if preferred.
  • Banana can be swapped with mango or pineapple for a different flavor.
  • Chia seeds may be replaced with hemp or flax seeds depending on availability or preference.
  • Adjust coconut water quantity to achieve your preferred smoothie thickness.
  • To sweeten the smoothie, add honey or a protein powder containing stevia.
