Ingredients
Fruit Base
- 4 peaches, peeled and chopped
- 3 cups blackberries
- ¼ cup brown sugar
- 1 tablespoon flour
- ½ teaspoon kosher salt
- ½ lemon, juiced
- 4 tablespoons unsalted butter, cut into tiny pieces
Crumble Topping
- 1½ cups old-fashioned oats
- ¾ cups loosely packed brown sugar
- ¼ cup all-purpose flour
- ¼ teaspoon cinnamon
- ¼ teaspoon kosher salt
- 8 tablespoons unsalted butter, softened
For Serving
- Vanilla ice cream
- Fresh mint leaves
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375 degrees Fahrenheit. Lightly spray a 9×13 inch baking dish with nonstick spray to prevent sticking.
- Prepare Fruit Mixture: In the baking dish, combine the peeled and chopped peaches with the blackberries. Toss them with brown sugar, flour, kosher salt, and freshly squeezed lemon juice until evenly coated. Let this mixture sit to marinate while you prepare the topping. Dot the fruit mixture evenly with the small pieces of unsalted butter.
- Make the Crumble Topping: In a separate bowl, stir together the oats, brown sugar, flour, cinnamon, and salt. Add the softened butter and use your hands to crumble and mix the butter into the dry ingredients. Continue mixing for about five minutes until the topping resembles moist, crumbly oat ‘sand’. Evenly sprinkle this crumble mixture over the fruit in the baking dish.
- Bake the Crisp: Place the baking dish in the preheated oven and bake for 35 to 45 minutes, or until the fruit is bubbly and caramelized and the crumble topping is golden brown and crisp.
- Serve: Allow the crisp to cool slightly before serving to let it set. Serve warm, topped with scoops of vanilla ice cream and garnished with fresh mint leaves for a refreshing finish.
Notes
- The peaches should be peeled for the best texture, but if preferred, you can leave the skins on for additional fiber.
- Letting the fruit mixture sit allows the flavors to meld and the fruit to release juices, improving the final consistency.
- Using unsalted butter ensures better control of salt content in the crisp.
- The crumble topping can be prepared ahead of time and stored in the refrigerator until ready to use.
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend and verify that oats are certified gluten-free.
