These Blackberry Coconut Bars are a deliciously refreshing no-bake treat, combining the natural sweetness of fresh blackberries with shredded coconut and a rich dark chocolate coating. Perfect for a healthy snack or dessert, these bars are easy to prepare and require minimal ingredients, making them an ideal choice for a quick, flavorful indulgence.

  • Total Time: 1 hour
  • Yield: 8 bars

Ingredients

Bar Base

  • 2 cups (130g) shredded coconut
  • 1 cup (120g) fresh blackberries (or berries of choice)
  • 1/4 cup (50g) coconut oil (or coconut butter)
  • Pinch of salt

Chocolate Coating

  • 1 cup dark chocolate chips

Instructions

  1. Puree the blackberries: Use a high-speed blender to puree the fresh blackberries until smooth. If you don’t have a high-speed blender, strain out the seeds to ensure a smooth berry puree.
  2. Mix ingredients: In a bowl or food processor, combine the shredded coconut, coconut oil, berry puree, and a pinch of salt. Stir or pulse until the mixture is well incorporated.
  3. Press into pan: Line a 5×7-inch glass dish with wax paper and firmly press the mixture into the pan, ensuring an even layer.
  4. Freeze the base: Place the pan in the freezer for at least 30 minutes to allow the bars to set.
  5. Cut into bars: Remove the set base from the freezer and cut it into 8 equal-sized bars.
  6. Melt the chocolate: Gently melt the dark chocolate chips using a double boiler or microwave, stirring frequently to avoid burning.
  7. Coat bars in chocolate: Dip or brush each bar with the melted chocolate to coat them evenly.
  8. Refrigerate to set chocolate: Place the coated bars in the refrigerator until the chocolate is fully set and firm.
  9. Enjoy and store: Enjoy these bars chilled. Store any leftovers in an airtight container in the refrigerator for up to one week to maintain freshness.

Notes

  • If you prefer a sweeter bar, add a natural sweetener like maple syrup or honey to the mixture before pressing into the pan.
  • To make the bars seedless, strain the berry puree to remove seeds, especially if not using a high-speed blender.
  • Dark chocolate chips can be substituted with semi-sweet or milk chocolate based on preference.
  • Make sure to firmly press the mixture into the pan to ensure the bars hold together well after freezing.
  • Store the bars in the fridge to prevent melting, especially in warm climates.
