These Biscoff Butter Cookies are a delightful treat featuring the rich, spiced flavor of Speculoos cookie butter. Soft and chewy with a crackled cookie butter topping, they are quick to prepare and perfect for satisfying your sweet tooth.

  • Total Time: 17 minutes
  • Yield: 10 cookies

Ingredients

Cookie Dough

  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup Speculoos or Biscoff cookie butter
  • 2/3 cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla bean paste
  • 1 1/2 cups + 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Topping

  • Extra cookie butter for the tops (about 1 teaspoon per cookie)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (180°C) to ensure it’s ready when your dough is prepared for baking.
  2. Cream butter and sugars: In a mixing bowl, use a paddle attachment or a mixer on low speed to cream together the unsalted butter, cookie butter, and light brown sugar until the mixture is light and fluffy.
  3. Add egg and vanilla: Mix in the room temperature egg and vanilla bean paste until fully combined, creating a smooth batter.
  4. Incorporate dry ingredients: Gradually mix in the all-purpose flour, baking soda, and salt until a cohesive dough forms. Avoid overmixing to keep the texture tender.
  5. Scoop the dough: Using a large cookie scoop (about 3 tablespoons), drop dough balls onto a parchment-lined baking tray. Space them about 3 inches apart to allow for spreading.
  6. Add cookie butter topping: Place approximately 1 teaspoon of extra cookie butter on top of each dough ball, gently pressing it slightly into the dough.
  7. Bake the cookies: Bake in the preheated oven for 10 to 12 minutes, or until the cookie edges turn golden and the cookie butter topping melts and cracks.
  8. Cool and serve: Remove cookies from the oven and transfer to a wire rack to cool completely before enjoying their chewy, flavorful goodness.

Notes

  • For accurate flour measurement, spoon flour into your measuring cup and level it off rather than scooping directly from the bag to avoid dense cookies.
  • Using room temperature ingredients helps with better mixing and texture.
  • You can substitute vanilla bean paste with pure vanilla extract if unavailable.
  • Store cooled cookies in an airtight container at room temperature for up to 5 days.
