Wet Ingredients
- 8 oz super firm tofu (235g, about ½ a block – drained)
- 1 tbsp white miso paste (23g)
- 1 tsp garlic powder (4g)
- 1 tsp onion powder (4g)
- ¼ tsp poultry seasoning (0.5g)
- 1 tbsp olive oil (14g)
- ½ tsp salt (2g)
- ½ cup water
Dry Ingredients
- 100 grams vital wheat gluten (¾ cup + 2 tbsp, spooned and leveled)
For Baking and Finishing
- 2 tbsp neutral oil (for coating and baking dish)
- ¼ cup water (divided into 2 tablespoons each for baking)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the seitan.
- Blend Wet Ingredients: Add all wet ingredients except the vital wheat gluten into a food processor. Blend until the mixture is completely smooth and well combined.
- Add Vital Wheat Gluten: With the food processor running, add the vital wheat gluten gradually, one spoonful at a time, through the chute until a dough ball forms.
- Knead Dough: Continue running the food processor for 2 to 3 minutes to knead the dough. The dough should become smooth, soft, and stretchy, passing the windowpane test where it can be stretched thin without tearing.
- Shape Seitan: Form the dough into a ball, then divide it into 4 equal portions. Shape each piece into a fillet about ¾ to 1 inch (2 to 2.5 cm) thick.
- Prepare Baking Dish: Lightly oil a 9×13-inch (23×33 cm) glass or ceramic baking dish. Place the fillets inside, coating all sides with oil. Pour 2 tablespoons of water into the baking dish and cover tightly with foil.
- Bake Covered: Bake at 350°F (175°C) for 30 minutes. Then remove from oven, flip each fillet, add the remaining 2 tablespoons of water (and more oil if required), cover again with foil, and bake for an additional 20 minutes.
- Finish Baking with Spice Rub: After a total of 50 minutes baking time, coat the fillets with your chosen spice rub to add extra flavor. Increase oven temperature to 425°F (220°C) and bake uncovered for 10 to 15 minutes to brown the fillets.
- Rest and Serve: Let the seitan rest at room temperature for 10 minutes. Slice, shred, or serve fillets as desired. For added flavor, you may also coat with sauce and pan-fry or grill for 2 minutes per side after baking at 425°F.
Notes
- The seitan may puff up significantly during covered baking, but it will deflate within about 30 seconds once removed from the oven.
- Try seasoning the fillets with your favorite spice rubs such as smoked paprika, ground black pepper, nutritional yeast, or poultry-style seasoning blends before the final high-heat bake.
- After finishing the bake, seitan fillets can be pan-fried or grilled briefly to add a crispy exterior and extra smoky flavor.
- Use neutral oils like canola or vegetable for coating to avoid overpowering the flavor.
