Ingredients
Sweet Potatoes
- 4 sweet potatoes
Chicken and Sauce
- 3 medium chicken breasts
- 2 tbsp avocado oil (or olive oil)
- 3/4 cup chicken broth
- 8 ounces BBQ sauce (or more to taste)
Toppings
- 1/2 cup sliced red onion
- 1/3 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat the oven. Set your oven to 400 degrees Fahrenheit to prepare for baking the sweet potatoes, ensuring an even cook and tender texture.
- Bake the sweet potatoes. Line a baking sheet with parchment paper, wash the sweet potatoes thoroughly, and poke them 5-6 times with a fork or sharp knife. Place them on the baking sheet and bake for about 60 minutes. Adjust baking time if your sweet potatoes are larger or smaller to ensure they are fully cooked and soft.
- Cook the chicken. While the sweet potatoes bake, heat avocado oil in a sauté pan over medium heat. Add the chicken breasts, seasoning them with salt and pepper. Cook for 5 minutes on one side, then flip the chicken over. Pour in the chicken broth, cover the pan, and cook for an additional 7-10 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and is cooked through.
- Shred the chicken. Remove the cooked chicken from the pan and shred it using two forks or a stand mixer, achieving a tender, pulled texture perfect for stuffing.
- Mix chicken with BBQ sauce. Transfer the shredded chicken to a bowl and mix thoroughly with the BBQ sauce, coating all the pieces evenly for maximum flavor.
- Assemble the stuffed potatoes. Slice each baked sweet potato in half lengthwise. Fill each half generously with the BBQ chicken mixture, and top with sliced red onion and chopped cilantro for freshness and a slight crunch.
Notes
- You can substitute chicken breasts with thighs for a juicier texture.
- Adjust BBQ sauce quantity based on your preferred level of sauciness.
- For a spicier kick, add a sprinkle of chili powder or jalapeños when mixing the chicken.
- Leftover stuffed sweet potatoes can be stored in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven or microwave until warmed through before serving.
