Ingredients
Dry Ingredients
- 3 cups rolled oats
- 3/4 cup walnuts
- 3/4 cup pecans
- 2 tsp ground cinnamon
- 1/2 tsp salt
Wet Ingredients
- 2 overripe bananas, mashed
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 tsp vanilla bean paste
Instructions
- Preheat the oven: Set your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Mix dry ingredients: In a large bowl, combine rolled oats, walnuts, pecans, ground cinnamon, and salt. Stir well to distribute the spices and nuts evenly.
- Add wet ingredients: Add the mashed bananas, maple syrup, melted coconut oil, and vanilla bean paste to the dry mixture. Mix thoroughly until every oat and nut is evenly coated with the wet ingredients.
- Spread and bake: Evenly spread the granola mixture in a thin layer across the prepared baking sheet. Bake for 30 minutes, tossing the granola halfway through to ensure even cooking and browning.
- Cool completely: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. The granola will firm up as it cools, creating the perfect crispy texture.
- Serve: Enjoy your granola with almond milk, sprinkle it on smoothie bowls, non-dairy yogurt, or oatmeal for added crunch and flavor.
Notes
- You can substitute walnuts and pecans with other nuts of your choice like almonds or cashews.
- Mashing the bananas well ensures even coating and natural sweetness throughout the granola.
- Store the cooled granola in an airtight container at room temperature for up to two weeks.
- For extra crunch, add seeds such as pumpkin or sunflower seeds before baking.
- If you prefer a sweeter granola, increase the maple syrup slightly, but be mindful of added sugars.
