  • 1 1/2 cups berries (divided, such as blueberries, raspberries, or strawberries)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking dish with parchment paper, ensuring it covers the bottom and sides completely. Set it aside to get ready for the batter.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, eggs, maple syrup (or honey), and vanilla bean paste. Whisk the mixture thoroughly until it becomes smooth and uniform in texture.
  3. Add Cornstarch and Berries: Incorporate the cornstarch into the yogurt mixture and whisk again until fully blended. Gently fold in 1 cup of the berries, making sure not to crush them.
  4. Pour and Top: Pour the prepared yogurt batter into the lined baking dish. Evenly sprinkle the remaining 1/2 cup of berries on top to create a colorful and appetizing surface.
  5. Bake the Yogurt: Place the baking dish in the preheated oven and bake for about 45 minutes. The yogurt is done when it’s set in the center and no longer jiggles when the dish is gently shaken.
