This Baked Salmon with Tomatoes and Basil Aioli recipe is a fresh, flavorful dish perfect for a quick and healthy meal. Tender salmon fillets are seasoned and baked with garlic and juicy campari tomato slices, then topped with a creamy homemade basil aioli that adds a bright, herby finish. Ready in just 30 minutes, this recipe balances simple ingredients with gourmet flavors.

  • Total Time: 30 minutes
  • Yield: 2 servings

Ingredients

Salmon and Toppings

  • 4 salmon fillets (6 ounces each, pin bones removed if present)
  • Kosher salt, to taste
  • Fresh cracked black pepper, to taste
  • 2 cloves garlic, minced
  • 2 – 4 campari tomatoes, cut into 8 slices each
  • 4 teaspoons olive oil (divided)

Basil Aioli

  • 1/2 cup mayonnaise
  • 10 basil leaves, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Pinch of kosher salt

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C). Line a baking tray with aluminum foil and spray it with non-stick cooking spray to prevent sticking.
  2. Prepare Salmon: Place the salmon fillets on the prepared baking sheet. Sprinkle each fillet evenly with kosher salt, fresh cracked pepper, and the minced garlic. Lay 2 slices of the campari tomatoes on top of each salmon fillet, then drizzle 1 teaspoon of olive oil over each piece to enhance flavor and moisture.
  3. Bake Salmon: Put the baking tray in the preheated oven and bake the salmon for 10 minutes. This timing will cook the salmon through while keeping it moist and tender.
  4. Make Basil Aioli: While the salmon is baking, prepare the basil aioli by combining mayonnaise, chopped basil leaves, lemon juice, olive oil, and a pinch of kosher salt in a mixing bowl. Stir well until smooth and refrigerate until ready to serve to allow the flavors to meld.
  5. Rest Salmon: When the salmon is done baking, remove it from the oven and tent it loosely with aluminum foil. Let it rest for 10 minutes; this allows the residual heat to finish cooking the salmon gently and keeps it juicy.
  6. Assemble and Serve: Use a thin spatula to carefully separate the salmon fillets from their skin. Transfer the fillets to a serving platter. Place two dollops of the prepared basil aioli on top of the tomato slices on each fillet. Serve immediately and enjoy the perfect balance of savory salmon and fresh, herbal aioli.

Notes

  • Make sure to remove pin bones from the salmon for an easier eating experience.
  • Adjust the number of tomato slices based on personal preference or tomato size.
  • Letting the salmon rest after baking helps maintain moisture and flavor.
  • For a lighter version, substitute mayonnaise with Greek yogurt in the aioli.
  • This dish pairs well with a side of steamed vegetables or a fresh green salad.
