Ingredients
Bagel Dough
- 1 cup (120g) unbleached all purpose flour
- 2 teaspoons baking powder
- 1.25 cups 2% cottage cheese (I love Good Culture brand)
Egg Wash
- 1 egg, beaten
Optional Toppings
- Everything bagel seasoning
- Poppy seeds
- Dried garlic flakes
- Dried onion flakes
- Sesame seeds
- Shredded asiago cheese
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Dry Ingredients: In a large bowl, whisk together the unbleached all purpose flour and baking powder until well combined for an even rise.
- Add Cottage Cheese: Add the 2% cottage cheese to the flour mixture and use a fork or spatula to break it up and mix until the texture resembles small crumbles.
- Form Dough: Using your hands or a rubber spatula, continue mixing the dough in the bowl until it forms a smooth, slightly sticky ball that pulls away from the sides, similar in texture to fresh pizza dough.
- Knead the Dough: Transfer the dough to a lightly floured surface and knead it a few times until it is no longer sticky, adding a sprinkling of flour if necessary to keep it workable.
- Divide and Shape: Use a bench scraper or sharp knife to cut the dough into four equal portions. Shape each portion into a ball, then gently press your thumb through the center to create the classic bagel hole.
- Prepare for Baking: Place each shaped bagel on parchment paper. Pour your choice of seasoning into a shallow bowl. Brush both sides of each bagel with the beaten egg wash, then dip them into the seasoning to coat evenly, and place them on the prepared baking sheet.
- Bake the Bagels: Bake in the preheated oven for 25-30 minutes, or until the bagels are golden brown, fluffy, and puffed up on the outside.
- Cool and Serve: Remove the bagels from the oven and allow them to cool for 15 minutes before slicing and serving. Enjoy your protein-packed bagels warm or at room temperature!
Notes
- For best results, use 2% cottage cheese as it provides the perfect moisture and protein balance.
- You can customize your bagels by using different toppings such as sesame seeds, poppy seeds, or shredded cheese before baking.
- Allowing the bagels to cool slightly improves texture and makes slicing easier.
- Store leftover bagels in an airtight container for up to 3 days or freeze for longer storage.
- If dough is too sticky, add flour sparingly; too much flour can make the bagels dense.
