Salmon

  • 1 1/2 pounds salmon of choice

Parmesan Garlic Herb Butter Mixture

  • 4 tablespoons butter, softened
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven: Preheat the oven to 425 degrees Fahrenheit and prepare a baking sheet by placing a large piece of foil on it, large enough to fold up around the salmon.
  2. Make the butter mixture: In a small bowl, combine the softened butter, lemon juice, olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, pepper, and chopped fresh parsley. Mix well to create a flavorful herb butter.
  3. Prepare the salmon: Place the salmon skin-side down on the foil. Gather the edges of the foil up around the salmon without completely sealing it, allowing some steam to escape.
  4. Spread the mixture: Evenly spread the prepared parmesan garlic herb butter mixture on top of the salmon to coat it thoroughly with flavor.
  5. Bake: Place the baking sheet in the preheated oven and bake the salmon for 10-12 minutes or until the salmon is firm and cooked through.
  6. Broil for browning: Switch the oven to broil and broil the salmon for the last 1-2 minutes to brown the topping to a golden finish.
  7. Garnish and serve: Remove the salmon from the oven, garnish with additional chopped parsley and parmesan cheese if desired, and serve immediately while hot and flaky.
