Instructions
- Preheat: Preheat your oven to 425°F (210°C) to prepare for baking the cod.
- Prepare Cod and Sauce: Butter a skillet or shallow baking dish and arrange the cod pieces inside. Sprinkle the cod with salt and pepper evenly. In a medium bowl, combine sour cream or creme fraiche, Dijon mustard, whole-grain mustard, minced leek, and drained capers. Mix well to create the mustard sauce.
- Apply Sauce: Spoon the mustard sauce evenly over the cod fillets, ensuring each piece is well coated with a smooth layer of sauce.
- Bake: Roast the fish in the preheated oven for 10-12 minutes until the cod is cooked through and opaque.
- Broil for Finish: Switch your oven setting to broil or grill, then continue cooking the cod for an additional 2-3 minutes. This step will blister the sauce slightly, adding texture and flavor.
- Garnish and Serve: Remove from the oven, sprinkle with fresh chopped parsley, and serve immediately while warm.
