Fritters
- ½ lb (220 grams) carrots, grated
- 1 small egg
- 4 tablespoons all-purpose flour, plus more if needed
- 1 garlic clove, grated
- 1 teaspoon ground cumin
- 2 tablespoons coriander leaves, chopped (optional)
- ½ teaspoon fine salt
- ⅛ teaspoon black pepper (optional)
Yogurt-Hummus Dip
- ½ cup (120 ml) hummus
- ½ cup (120 ml) plain yogurt
- 1 tablespoon lemon juice
Instructions
- Preheat and prepare baking sheet: Preheat the oven to 400℉/200℃ and grease or line a baking sheet with parchment paper to prevent sticking.
- Grate carrots: Using a food processor or box grater, grate the carrots finely. Then drain and squeeze them with a paper towel to remove excess moisture, ensuring the fritters bind well. Transfer the carrots to a mixing bowl.
- Mix ingredients: Add the egg, flour, grated garlic, ground cumin, chopped coriander (if using), salt, and black pepper to the grated carrots. Stir until well combined. If the mixture feels too wet and doesn’t hold shape, add more flour gradually as needed.
- Shape fritters: Scoop a heaping tablespoon of the mixture onto the prepared baking sheet and flatten slightly with your hand to form small patties.
- Bake fritters: Place the baking sheet in the oven and bake the fritters for about 12 minutes. Carefully flip each fritter and bake for an additional 12 minutes, or until they turn golden and crispy on both sides. Oven times may vary slightly.
- Prepare dip: In a small bowl, mix together the plain yogurt, hummus, and lemon juice until smooth to create a tangy yogurt-hummus dip.
- Serve: Serve the freshly baked carrot fritters warm alongside the yogurt-hummus dip. They can also be enjoyed cold. Enjoy your flavorful and crispy snack!
Notes
- If the carrot mixture is too wet, add more flour a tablespoon at a time to help bind the fritters.
- The coriander leaves are optional but add a fresh herbal note to the fritters.
- You can substitute plain yogurt with Greek yogurt for a thicker dip.
- These fritters can be reheated in the oven to restore crispiness.
- For a vegan version, replace the egg with a flax egg and use a vegan yogurt alternative.
