Butternut Squash Fries

Instructions
- Preheat oven: Preheat your oven to 425°F (220°C) and line two large baking sheets with parchment paper to prevent sticking and ensure even cooking.
- Prepare the squash: Place the butternut squash sticks into a large bowl and pat them dry thoroughly with a paper towel to remove excess moisture. This helps them get crispy. Sprinkle 3 tablespoons of cornstarch over the squash and use your hands to coat each stick completely. Transfer the coated sticks into a colander and gently shake to remove any excess cornstarch.
- Season the fries: Return the coated squash sticks back into the bowl. Add 3 tablespoons olive oil, 1 teaspoon garlic powder, ½ teaspoon paprika, ½ teaspoon dried thyme, plus salt and pepper to taste. Toss everything together well to ensure the fries are evenly coated with oil and spices.
- Arrange for baking: Spread the butternut squash fries in a single layer across the prepared baking sheets, making sure not to overcrowd them. This allows the fries to bake evenly and become crispy on all sides.
- Bake the fries: Place the baking sheets in the oven and bake for 30-35 minutes, flipping the fries halfway through cooking to promote even browning and crispiness. The fries should be tender inside and crisp on the outside once done.
- Rest and serve: Remove the fries from the oven and allow them to cool for 5-10 minutes. Serve warm with your favorite mayo and fresh herb dipping sauce for a delicious finishing touch.
