Ingredients
Marinade:
- 2 cups coconut aminos
- 2 tablespoons honey
- 1 clove garlic, minced
- 2 teaspoons freshly grated ginger
- 1/2 teaspoon sesame oil
Main Ingredients:
- 1 tablespoon ghee
- 1 tablespoon olive oil
- 1 1/2 pounds sockeye salmon fillets (skin on if possible)
- 2 cups broccoli florets
- 1 red or yellow bell pepper, trimmed and sliced thinly
- 2 stalks celery, trimmed and diced
- 1 large shallot, trimmed and diced
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1 teaspoon sesame seeds
- 1 tablespoon fresh cilantro, chopped
Instructions
- Make the Marinade: In a small bowl, whisk together the coconut aminos, honey, minced garlic, grated ginger, and sesame oil until well combined and smooth.
- Preheat Oven and Prepare Skillet: Preheat your oven to 400°F (200°C). In a heavy, oven-safe skillet, melt the ghee and olive oil over medium-high heat.
- Sauté Vegetables: Add broccoli florets, sliced bell peppers, diced celery, and shallots to the skillet. Stir frequently to cook evenly, sautéing for about 5 minutes until vegetables are crisp-tender. They should be easily pierced with a fork but still maintain their snap. Once done, use a spoon to remove the vegetables from the skillet and set them aside on a plate.
- Prepare and Sear Salmon: Place the salmon fillets in the same skillet, skin side down if they have skin. Pour the prepared marinade evenly over the salmon.
- Bake Salmon: Transfer the skillet to the preheated oven and bake uncovered for 8 minutes.
- Add Vegetables Back: Remove the skillet from the oven and carefully add the sautéed vegetables back into the pan, lightly pushing them into the marinade around the salmon.
- Finish Baking: Return the skillet to the oven and bake for an additional 7 minutes until the salmon is cooked through and flakes easily with a fork.
- Serve: Remove the skillet from the oven and let the salmon cool for a few minutes. Garnish with toasted sesame seeds and freshly chopped cilantro before serving.
Notes
- If using thicker salmon fillets, adjust baking times slightly to ensure the fish is fully cooked.
- You can substitute coconut aminos with low-sodium soy sauce if unavailable.
- For extra flavor, toast the sesame seeds in a dry pan before sprinkling them on top.
- To keep vegetables crispier, avoid overcooking during the sauté step as they will continue to cook in the oven.
- Use an oven-safe skillet such as cast iron to seamlessly transition from stovetop to oven.
