- 1 tsp (2 g) anise seed
- 1 tsp (6 g) salt
- 1 tsp (4 g) granulated sugar
- 1 cup (240 ml) vegetable oil, for frying
Instructions
- Grate the Yuca: Peel the yuca and finely grate it using the smallest holes of a box grater to ensure a smooth texture ideal for fritters.
- Mix Ingredients: In a medium bowl, combine the grated yuca with softened butter, beaten egg, anise seed, salt, and granulated sugar. Stir until the mixture is evenly moistened and well integrated.
- Heat Oil: Pour the vegetable oil into a medium skillet and heat over medium heat until it shimmers, indicating it is hot enough for frying.
- Fry the Fritters: Working in batches, drop tablespoon-sized mounds of the yuca batter into the hot oil. Lightly flatten each mound with the spoon to allow even cooking and proper crispness.
- Cook Until Golden: Fry the fritters for 2 to 3 minutes on each side, turning once carefully, until they develop a deep golden-brown color and become crisp.
- Drain Excess Oil: Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil and keep them crisp.
- Serve Warm: Enjoy the arepitas de yuca immediately while they are hot and crunchy for the best flavor and texture.
