Ingredients
Apples
- 1 cup chopped apples (1 small-medium size apple, peeled, cored, and chopped into 1/4-inch cubes)
Wet Ingredients
- 2 tablespoons unsalted butter (at room temperature)
- 2 tablespoons milk
- 1/2 teaspoon vanilla bean paste
Dry Ingredients
- 1/4 cup all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
Instructions
- Prep apple. Wash, peel, core, and chop an apple into 1/4-inch cubes. Measure out one full cup of chopped apple for the recipe.
- Cook apple. Place the chopped apple into a microwave-safe large coffee mug. Microwave for 2 minutes to soften the apples, reduce excess moisture, and enhance their flavor.
- Finish batter. Remove the mug from the microwave. Stir in room-temperature butter until completely melted, then mix in the milk. Add the flour, sugar, baking powder, vanilla bean paste, and salt. Stir thoroughly until you have a smooth, evenly combined batter. Using room-temperature butter helps maintain warm apple temperature and improves cake texture.
- Finish cooking. Microwave the mug cake for 1 minute 50 seconds if using a wide mug, or about 2 minutes for a regular-sized mug. After cooking, do not open the microwave immediately. Let the cake settle inside for 10–20 seconds before removing it to prevent shrinking and improve texture.
- Serving. Serve warm as is, or top with ice cream or whipped cream for an extra special treat.
Notes
- Using room-temperature butter is important to ensure it melts smoothly without cooling down the apples, which can affect the final texture of the cake.
- The cooking time may vary slightly depending on your microwave’s wattage and mug size—adjust accordingly.
- The mug should be large enough to avoid spillage while microwaving.
- Feel free to add a pinch of cinnamon or nutmeg to enhance the apple flavor.
- For a dairy-free option, substitute milk and butter with plant-based alternatives.
