Ingredients
Dry Ingredients
- 2 cups (200 g) old fashioned rolled oats, use certified gluten-free if GF is needed
- 1 ½ teaspoons ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon salt
Wet Ingredients
- 1¾ cups (365 g) plain Greek yogurt, full-fat or low-fat work best
- ⅓ cup (78.86 ml) maple syrup or honey
- 2 large eggs, can substitute flax eggs
- 1 tablespoon avocado oil, or neutral oil, plus extra for greasing
- 2 teaspoons vanilla bean paste
Fruit
- 10 ounces apples, diced small (about 2 medium apples), peeled if desired (Fuji or Honeycrisp recommended)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375℉ (190℃). Grease an 8×8 inch baking dish lightly with avocado or neutral oil to prevent sticking.
- Mix Dry Ingredients: In a medium-sized bowl, combine the rolled oats, ground cinnamon, baking powder, and salt. Stir thoroughly to ensure the spices and leavening agent are evenly distributed.
- Add Wet Ingredients: To the dry mixture, add the eggs, Greek yogurt, vanilla bean paste, avocado oil, and maple syrup or honey. Stir all ingredients together until a uniform batter forms.
- Fold in Apples: Gently fold the diced apples into the oatmeal batter, ensuring they are evenly dispersed without breaking down.
- Transfer and Bake: Pour the batter into the prepared baking dish, smoothing the top evenly. Place in the oven and bake for 35 to 40 minutes until the top turns golden brown and is set. For best results, the internal temperature should reach approximately 200℉ (93℃).
- Cool and Serve: Remove the baked oatmeal from the oven and let it cool in the pan for about 15 minutes. This helps it set further, making it easier to slice.
- Enjoy: Serve warm, optionally topped with extra Greek yogurt, a splash of milk, or a drizzle of peanut butter. Leftovers can be cooled completely and stored in an airtight container in the refrigerator for up to 4 days.
