Ingredients

Dough

Instructions

  1. Prepare the dough: In a large bowl of a freestanding mixer fitted with the hook attachment, combine the flour, caster sugar, and salt. Add the milk, egg, yeast, and half of the melted butter (50 g). Mix on low speed until the dough comes together.
  2. Knead the dough: Increase the mixer speed to medium and knead for 3-5 minutes until the dough is smooth and no longer sticks to the bowl sides. If kneading by hand, knead on a floured surface for 10-15 minutes until elastic and smooth.
  3. First proof: Transfer the dough to a lightly greased bowl, cover it with cling film or a tea towel, and let it rest in a warm place for about 2 hours, or until doubled in size. Meanwhile, line a large baking sheet with parchment paper.
  4. Shape the doughnuts: Turn out the risen dough onto a floured work surface and roll it out to about 1 inch thickness. Use a doughnut cutter or pastry rings to cut out doughnuts and holes. Place them on the prepared baking sheet, brush with remaining melted butter, cover loosely, and rest for 45 minutes to proof again.
  5. Preheat air fryer and fry doughnuts: Preheat the air fryer to 180°C (356°F) and lightly grease the air fryer basket or plate with oil or melted butter.
