Ingredients

For the Marinade

  • 5 Chicken legs (chicken quarters) (about 2.4lb / 1kg)
  • 1½ Tablespoons Za’atar seasoning
  • Juice of 1 Lemon
  • Zest of 1 Lemon
  • 1 Tablespoon Garlic paste
  • 1 Tablespoon Tomato paste
  • ¼ cup Olive oil
  • Salt and black pepper to taste

  • 1 Medium Onion (sliced into rounds)

Instructions

  1. Prepare the Marinade: In a large bowl, combine za’atar seasoning, lemon juice, lemon zest, garlic paste, tomato paste, olive oil, salt, and black pepper. Mix thoroughly to create a uniform marinade.
  2. Prep the Chicken: Clean the chicken legs by removing any excess fat and skin. Using a sharp knife, make three shallow incisions on each leg to allow the marinade to penetrate deeper and promote even cooking.
  3. Marinate the Chicken: Place the chicken legs into the marinade, coating them thoroughly by rubbing the mixture into the incisions and all surfaces. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to maximize flavor absorption.
  4. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting.
  5. Arrange for Roasting: Spread the sliced onion rounds and the squeezed lemon peel shaft evenly on a rimmed baking tray. Lay the marinated chicken legs atop the onions and lemon rind.
  6. Roast the Chicken: Place the tray in the preheated oven and cook for 35-45 minutes or until the chicken is fully cooked and golden brown. Check for doneness with a meat thermometer; internal temperature should reach 165°F (74°C). Halfway through cooking, baste the chicken with the pan juices to enhance moisture and flavor. There’s no need to flip the chicken.
