Rice and Broth
- 1 cup uncooked wild rice
- 3/4 cup uncooked long grain rice
- 3 cups chicken broth
- 2 cups boiling water

Instructions
- Sauté Mushrooms and Onion: In a large skillet, melt butter over medium heat. Add the sliced mushrooms and chopped onion, cooking gently until tender and browned, which enhances their natural flavors.
- Combine Ingredients: In a large mixing bowl, add the sautéed mushroom mixture along with uncooked wild rice, uncooked long grain rice, sliced almonds, chicken broth, heavy whipping cream, salt, and pepper. Stir until all ingredients are evenly distributed.
- Transfer and Bake Covered: Grease a 2-1/2-quart baking dish generously. Pour the rice and mushroom mixture into the dish, spreading evenly. Cover the dish with aluminum foil or a lid and bake in a preheated 350°F (175°C) oven for 75 minutes.
- Uncover and Add Cheese: Carefully remove the baking dish from the oven, uncover it, and sprinkle the grated Parmesan cheese evenly over the top of the bake.
- Final Baking: Return the uncovered dish to the oven and bake for an additional 10 minutes or until the rice is fully tender and the cheese has melted to a golden finish.
