Ingredients

  • For the Dressing:
  • ½ cup hemp hearts
  • ½ cup loosely packed spinach
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh basil leaves
  • ¼ cup fresh parsley leaves
  • 1 tablespoon tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 1 garlic clove
  • 1 teaspoon coconut aminos
  • 1 teaspoon maple syrup (or to taste)
  • ½ teaspoon fine sea salt (or to taste)
  • 46 tablespoons water (to thin as needed)

Instructions

  1. Blend the Ingredients: Add all ingredients to a small blender cup. Start with 4 tablespoons of water and blend until smooth.
  2. Adjust Seasoning and Consistency: Taste the dressing and adjust the seasoning with more salt or maple syrup as needed. If you prefer a thinner consistency, add more water (1 tablespoon at a time) until you reach your desired texture.
  3. Serve and Enjoy: Use the dressing on your favorite salad, as a veggie dip, or even stir it into pasta!
