Ingredients
- 2 pounds ripe tomatoes (Roma or plum)
- 3/4 cup brown sugar
- 1/4 cup lemon juice
- 1 tablespoon grated fresh ginger
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon garlic powder
Instructions
- Chop the tomatoes and remove any loose seeds. Grate the fresh ginger.
- In a medium saucepot, combine chopped tomatoes, brown sugar, lemon juice, grated ginger, salt, cumin, crushed red pepper, and garlic powder.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat and simmer uncovered for 1 to 1 1/2 hours, stirring regularly to prevent burning.
- Once the jam is thick and glossy, remove from heat.
- Transfer to clean jars. Let cool, then store in the refrigerator, freeze, or can according to proper canning guidelines.

- Adjust crushed red pepper to your preferred heat level.
