Ingredients

  • 2 pounds ripe tomatoes (Roma or plum)
  • 3/4 cup brown sugar
  • 1/4 cup lemon juice
  • 1 tablespoon grated fresh ginger
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Chop the tomatoes and remove any loose seeds. Grate the fresh ginger.
  2. In a medium saucepot, combine chopped tomatoes, brown sugar, lemon juice, grated ginger, salt, cumin, crushed red pepper, and garlic powder.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce heat and simmer uncovered for 1 to 1 1/2 hours, stirring regularly to prevent burning.
  5. Once the jam is thick and glossy, remove from heat.
  6. Transfer to clean jars. Let cool, then store in the refrigerator, freeze, or can according to proper canning guidelines.
